Many past, present and future Champagne makers learned, or are learning, their art and science at the Lycée Viticole de la Champagne run by the Ministry of Agriculture. As part of their studies, students produce quite excellent bubbly, made with grapes from some of Champagne’s most prestigious parcels and sold under the label Champagne Sanger (www.sanger.fr). Sanger was established shortly after WWI, which is why the name is pronounced sans guerre (‘without war’), ie sahn-GHER.
