I had heard about Forage and Chef Chris Whittaker for a while but hadn't made my way to its downtown location within the Listel Hotel. I stayed at the hotel and thought it was an opportune time to try out the restaurant as well. Forage was not at all what I expected. It has more of a casual neighborhood feel but with a modern vibe. The restaurant focuses on using the best ingredients found locally. Luckily for its patrons, BC has a strong wine region, a burgeoning craft brewery scene, farms and the Pacific Ocean nearby.
The menu at Forage changes according to what's in season and what's available. I had great timing and was able to feast on spot prawns that were in season. I had a dish with wild BC spot prawns, hand made cold noodles, watercress, chili oil, and sea salt. I may have had two dishes plus a handful of their offerings. What I like most about the restaurant and the food is that it's not only delicious but authentic. They do it because it's what they know, not because its trending in the culinary world.
