The newest kid on the coffee block in Vancouver is Timbertrain. A group of three childhood friends decided to take on the task of brewing coffee in an area serviced by several well known cafes.
From their site: "We offer only the finest beans by selecting and sourcing green beans, trusting no one to the roasting process but ourselves. We’re committed to the fundamentals and the science of brewing perfection into each cup we serve. Our slow bar encompasses our dedication to taste and flavour; we brew our freshly roasted coffee beans with methodical, measured, and mastered technique."
If you're in the area, come in for a cup or even set up your "coffice" for the day. They have booth seating and I saw a handful of people on laptops. I grabbed a cup and would definitely return for more when I'm in Gastown.
For more coffee shops and cafes in the city, I've compiled them all and included a Google Map here: http://bit.ly/vancouvercoffeeguide
