Ingredients
2x 600g tiger prawns
3 tablespoons fresh passion fruit juice
1 shallot, finely chopped
1 teaspoon butter
teaspoon salt
teaspoon pepper
1 teaspoon sake
teaspoon palm sugar
teaspoon olive oil
1 teaspoon white wine
Directions
1. The tiger prawns are seasoned with salt, pepper, white wine and olive oil
2. Set pan to medium heat. Grill tiger prawns until they look scorched and then bake the tiger prawns in the oven for about 2-3 minutes, temperature 200-250C until cooked.
Passion fruit sauce
1. Fry the shallots with the butter, followed by passion fruit juice. Then season with salt, pepper, sugar, simmer all the ingredients together, until you can taste sweet and sour. Then add a little sake; this will pull out the fragrance of the passion fruit sauce.
2. Finally, the tiger prawns are placed on the plate. Topped with passion fruit sake sauce and decorated with a little onion.
Serve with Thai herb rice.
