A new wine bar called Proof in the Penn Quarter of Washington DC has an Enomatic wine serving system which keeps wine for up to 2 months by filling the space in the bottle with argon gas, displacing oxygen which would normally make the wine go off after a day or two. The Enomatic can also serve accurate tasting and glass measures, allowing Proof to serve 16 varieties of white and 16 varieties of red by the glass.
