WHAT'S YOUR FAVOURITE TABLE IN HONG KONG?

I love the one at Yardbird, on the ground floor. From that point you get a good view of all the bar action, and there is a lot of it. People having a good time, eating and drinking, staff running around … It's just non-stop, and I love that. The food there is so good, you just keep ordering more and more, and you can't stop. YOUR BIGGEST FOOD DISCOVERY IN HONG KONG?

Since arriving in Hong Kong for the relaunch of The Pawn, we've been ordering a lot of Australian meat for the menu. Australian meat is something I haven't used very often in the past, but now I have to say it has really impressed me. Top quality, good marbling, rich flavours – it's excellent.

 WHAT IS HONG KONG'S BEST KEPT FOOD SECRET?

I had the best bowl of pho at Sun Chuk Yuen (Vietnamese restaurant) on Lan Dale Street in Wan Chai. So simple, but delicious. I love Asian comfort food and this bowl of noodles had everything you need for a good satisfying lunch: some protein, some carb and plenty of green veg in delicious warm stock.  PLACE TO GO ON A DAY OFF?

A lot of my time is taken up by work, so family time is very important to me. To be honest, if I do get some leisure time I would prefer to spend it with my two little girls rather than going anywhere. 

 FAVOURITE INDULGENCE IN HONG KONG?

Besides all the amazing new food I get to try, I have to say I'm really enjoying my early morning runs in this city. The skyline, the harbour, it's just quite unique, really. No other place in the world compares to Hong Kong.

WHAT SHOULD A VISITOR AVOID FOOD WISE IN HONG KONG?

I would have to say shark's fin soup. I'm very much against unethical and wasteful practices like shark finning. I was very happy when I heard many Chinese restaurants and hotels here are banning this soup from their menus, and I think Hong Kong should keep educating visitors on this.
