This simple and tasty dish has been voted as one of the most popular Thai dishes for foreign visitors to eat when visiting Thailand. As with a number of Thai dishes, there are regional variations in the way the food is prepared. The Thai word for chicken is ‘kai’ (also written as ‘gai’) and this dish includes bite size pieces of chicken and cashew nuts as the basic ingredients which are stir-fried in a wok. The dish also usually includes a combination of water chestnuts, mushrooms, peppers, garlic, bamboo shoots, onion (and spring onion) and chopped dry chillies. The chicken and vegetables are fried with a mix of light sauces (soy, fish and oyster). This gives the whole dish a very pleasant flavour that doesn’t overpower the taste buds, although the dried chillies can still give the food a kick.
